I have had the pleasure of working with Mat on a number of occasions over the past four years, most notably when we were both employed by the luxury ski chalet company, Consensio.
The longest period we spent working together was in the 2012-’13 season, when he was the chef in the chalet which I was managing for Consensio in Méribel. There, we had a relatively cramped open-plan kitchen, which was surrounded on two sides by the guest living area and dining room.
Mat was an incredibly tidy and personable chef, able to make polite and engaging conversation from the first thing in the morning right and right to the end of service and beyond in the evenings. The guests raved about his food, which is a modern but unpretentious cuisine, and he enjoyed the ability to ‘showboat’ a little when given the opportunity.
In terms of working with him, he has a charming and unflappable nature and is able to cope with demanding guests and last-minute changes with aplomb. His kitchen is also the tidiest I have seen out of all of the chefs I have worked with at Consensio; it is sometimes difficult to believe he’s actually preparing food when one comes into a kitchen mid-service, as it’s so clean.
I cannot recommend Mat’s services highly enough. He would come as a valuable asset to any kitchen or top-end hospitality service offering.

Last winter season the British ski chalet agent Meriski had hired Matt and I had the pleasure of Matt being the chef at our chalet.
1st: Matt works like a swiss clock works.
He is never late. Prepares food well in advance and leaves nothing to chances. Dinners were always ready when guests wanted to eat them even when guests arrived later that they had told to Matt. The food was still impeccable.
2nd: Matt is extremely well organized.
The kitchen is never a mess and was always at night when he left. Matt enquired what his clients liked to eat, bought the food and prepared it to everyone’s liking. He even keeps a record what we had eaten before not to repeat a dish (and we had the pleasure of eating 42 dinners with him) and never got bored by his cuisine.
3rd: Matt has high standards.
To ensure clients eat at top level Matt brings his own kitchen equipment. He even made me Matt buy a Paco ice machine, which to this day I do not regret having bought. Matt is a perfectionist and it shows through and through.
4th: Matt cooks phenomenal.
I truly know of no other home cooking that has had such outstanding consistently high quality as the food Matt prepared for us. r how Every night was a ''feast", simply a joy to come to dinner. Moreover Matt knows how to prepare any type of food be it a delicious soup or salad, a main course or delicious dessert.
5th: Matt is not arrogant.
When I complimented Matt how well he had prepare a dish and how tender the meat was he modestly replied: “Well, that is only because of the high quality of meat.” It is a pleasure to have him around, he knows not to overstep his borders and has a wonderful character.
To sum it up: “I am very sad indeed that Matt, won’t be working with our new agent (Concensio) this year as I would truly love to have him back…”

The quality of the cooking is exceptional. Matthew cooks to an incredibly high quality level, with French fine dining being his specialty. Everyone is incredibly impressed with the complexity and flavour combinations. He is punctual, hard working and keeps the kitchen extremely clean at all times.
